Kalio Chicken
About the Recipe
This dish often served as a main dish during lunch or dinner, Kalio Chicken is a traditional Malay dish made up of Premium red palm oil, chicken, lemongrass, and a hint of coconut milk. It is known to have a high nutritional value of Vitamin A and E contents but it also is popular simply for its creamy and meaty flavour. The perfect meal to enjoy with family and friends.

Ingredients
- 1/2 cup Premium Red Palm Oil
- 4 kaffir lime leaves
- Turmeric leaves
- 3 lemongrass (bruised)
- 1 chicken (cut into 8-12 pieces)
- 1 tsp white pepper
- 700ml coconut milk
- salt and sugar to taste
- Water (based on your preference, either sauce wants to be thick or not)
Instructions

Grind the following into paste: 8 shallots, 4 cloves garlic, 1/2 inch ginger, 1-inch turmeric, 5 candlenuts (buah keras), 10 dried chili pepper (soaked with hot water until soft)

Heat oil in a pot and saute lemongrass until fragrant then add in the paste and cook until u can see the oil rise (pecah Minyak).

Add turmeric leaves and kaffir lime leaves.

Add chicken pieces and cook until no longer pink.

Pour coconut milk. Add the water. Season with salt and sugar.

Mix well and bring to a boil

Reduce heat and simmer until the sauce is thickened and you could see the oil rises on the surface of the sauce.

Adjust salt and sugar as needed.

Turn off the heat. Serve with steamed rice.
